another New York strip primal headed to glory! 1 Year, 6 Months ago  
Today I started another NY strip sub-primal that weighed right at 14 pounds.



I can't buy Prime around here, but this was Choice and since I had about 12 to choose from I checked the ends of all for signs of marbling and this one yelled BINGO!

When I bought it I knew it might be a tight fit and sure enough it was. No need to trim the large 10 x 20 Drybag as it was perfect for this chunk-o-cow! My plan is 28 days. In the past I have only aged strips for 21 days since they are thinner, yet this bad boy had a fat cap that should help control the drying. Here it is shoe-horned in the refrig, yet not touching the walls . See ya in a month! Have a nice trip!

i'm currently aging a ny strip as well...i was going to go for the standard 21 days, as i had the butcher remove the fat cap as the instructional video suggested.

so if we leave the fat cap on, we could age a ny strip for more than 3 weeks with good results? interesting.

i'll definitely be checking in on this thread to see your results.

Friday, August 27th was day 28, but I decided to let it age another full week and then cut it and have a nice steak dinner this coming Saturday of 35 day New York strips! I'll tell you about next Sunday.

Well, 35 days ago this chunk-o-cow was all girly pink:


but today it looked like the aged beauty I wanted it to:


Then cut, but untrimmed revealed some nice marbling that I had hoped for even though it was graded USDA choice:


And finally the trimmed picture:


There's going to be some great steak dinners in our future starting tomorrow night! Thanks DrybagSteak!
