Wet aging in my freezer ? 1 Year, 5 Months ago  
Hi, as I only came across this website after I had slaughtered my cow most of the meat is in single steak form in normal vacum sealed bags in my freezer. Does this mean that they are being wet aged in my freezer and the meat is breaking down. I know I will not have the same distinct beutifull flavour that you get from dry aging but will the meat still be breaking down and be more tender than if I ate it now? I have bought the dry age bags from this website and I will be using it for my next cow.

unless you packaged your steaks with a wet aging chemical compound there is no aging going on in your freezer - the meat is merely frozen.

I agree with Ron with the exception that there may be some moderately light tenderizing of the meat due to the freezing of the water cells in the meats fibers. But as you indicated, not the flavor of dry aged meat with the drybagging principles.
