Anyone tried using drybags for more than 21 days? 1 Year, 8 Months ago  
I've read about places that dry-age steaks for as many as 6 months. Just wondering if anyone has tried the drybags for more than 21 days like recommended?

Yes, I have gone 28 days with one rib eye primal and 35 days with another. Right now I'm on day # 7 of what I intend to be a 45 day aging of a 10 pound rib eye. I just imagine 6 months would result in high priced jerky unfit to cook and too tough to eat!

Welcome beefy!

Here's a picture from Saturday night of a 2# chunk of that prime rib primal that I had aged for 35 days and then froze back in January. I am now at day 40 of another sub-primal that will end in 5 more days. BTW this meat was superb at 35 so I'm anxious to see what 45 will taste like.


As for buying some bags - why wait any longer?
