What a GREAT product!!!!!!! I am from Texas and I remember what "aged" beef tasted like. Now I am experiencing that taste again.....right out of my own refrigerator!!!!!!!

Just like in the old days......you have to know and love the process.....and when you do, you get the rewards. I screwed up at first, and got help and guidance from Thea. Started paying attention to every little step of the process, and now I have perfect 21 day aged ribeye and new york strips. Thanks Thea.

Don't hesitate to contact Thea with questions or help. Hey......holler at me as well, and I will give as good a "novice" guidance as I can.

OK Thea, what do you think about adding herbs or spices to the bag of a Prime Rib roast??????/

I know you asked Thea and not me, but I wouldn't want to possibly contaminate my meat by introducing some herbs which might spoil or carry bacteria. As for spices I can't imagine that would be a good idea either. Besides when you trim the aged beef you will remove that layer anyway...unless you are a fan of untrimmed or only slightly trimmed aged beef.
