Newbie question: My full recipe for my salumi originally calls for inoculation of the extrerior of the hog afterends with Mold 600 prior to hanging in a chamber. Since I plan to use the charcuterie kit is it worthwhile to still incolulate prior to placing them in the vacuum bag or am I just wasting the spores as the outer portion of the casing will be encased in the Umai Dry bag?
