So just finished putting together small batch of pepperoni and spanish chorizo in 32mm UMAi casings. We use our over frequenty so I just hung them up under a shelf in kitchen for the 36-72 hour fermentation. I didnt notice the note on the instructions to keep away from airflow. Is this going to be a problem? I am getting ready to do some Soppressata today and will modify somehow if I need to.
