Is this normal was created by RogueAtom87
So I made a batch of Pepperoni on May 18th. Let it ferment for 48 hours then in back of fridge on a metal grate. I just checked and already at 172Gram down from 263Gram starting. I used 32mm casings. This is almost 35% already. Could that be right. Cant be almost ready this soon can it?
