washing capicola with wine was created by stephguate
with Capicola, has anyone ever done a post brine wine wash prior to aging? My second Capicola will be done brining on sunday and I am thinking of doing this. Also if anyone has done it, did you use red or white wine?

Hello, and sorry it took a bit to get to you with an answer.

We don't want to pretend to know everything about this process, and are learning as we go. We did find some sort of "folk" recipes that mention rinsing the cure off with a cheap red, but more often they suggest using a red wine as an ingredient when making a salumi.

Sorry we don't have a good answer--but we hope that you can share your results so we know if you noticed how the wine made a difference in the results.

Thanks! Im gonna try the wine wash, since I know it is common practice with salamis, I doubt it will hurt anything. I am freaked out about it being too salty, since my fry test on my first capicola came out way too salty, supposedly the wine helps wash the access salt out. I will let you all know!

just saw your post. I also have a coppa in the bag. I first washed mine with water. dried and then rinsed with a reisling(because it was open.) I let that air dry for about 30 min then bagged and sealed.

after my regular water wash, I ended up washing with a semi dry Shiraz. I then doused with a mix of regular and smoked paprika and sealed. Got a pretty decent seal, and am hopeful for good results!
