Hi all,

My local store is having a crazy sale on strip loin sub-primal's so I had to get one and try my luck. It weighed in at 19.88 lbs and I picked it up for $79, yes that's Angus Choice at $3.99 / lb saving me well over $200.

After reading up I'm curious to know if anyone has had any good luck with a large bone-in strip loin at 45 days? I was planning 35 for some reason but maybe 45 would be better suited?

Any advise is appreciated.

Thanks Jon

**EDIT** Please disregard the incorrect date on the bottom shelf, rib, it should read 10/23/16 like the one on the top shelf. Speaking of the top shelf, that one is getting trimmed on Friday for dinner that night. I'm so looking forward to aged prime rib...

Jon,
With a bone in and seeing how thick that fat cap is I personally think 45 days would be fine! Ron

Definitely a minimum of 45 day's, we'll see how the 45 day rib eye turns out before that decision is final. Thanks

Went to 55 days and it turned out wonderful, very tender and a nice aged flavor. The weight after 55 days was 16 lbs 10 oz. Looks like it lost 3 lbs 4oz during the drying period.

Can't wait to try this again and maybe go 90 days.
