Can you use any vacuum bag for this application. This is my first time doing any kind of dry salami and i really don't want to waste 5 lbs of meat.

If you are familiar with vacuum packaging, you know that FoodSaver bags are designed to preserve food by containing moisture and preventing oxygen contact with food that has been packaged in this laminated barrier material.
UMAi Dry, in contrast, is a single layer material which allows for the release of moisture and exchange of oxygen, thereby allowing dry aging and dry curing to be possible in a protected environment. UMAi Dry is very different from vacuum bags, it is not a vacuum bag, it is a membrane.

Ditto with Jim.

Also if your going to do salami in the UMAi salumi bags its easier to just use the zip ties and or cooking twine to seal both ends.
