Hello all
I'm trying aging for the first time today. I've purchased a really nice 18 pound sirloin strip with a really nice fat cap. Just wondering how long to age it. I was thinking 35 to 40 days. Any advice would be helpful. Thanks Bob

If you follow attached instructions and age the meat in a your regular home fridge, you will be successful. Do not age in a mini fridge or fridge located in a cold or hot garage.
