Hi guys,
This is my second time dry aging with the Umai bag on Ribeye. The first time was great, but since I did it so long ago I don’t remember if I had the same smell or not when I did it.
This second time though, I noticed about 15 days in, there is a weird smell in my fridge. I’m not sure if its the smell of the earthy and nutty smell that people said was okay. The beef looks like its aging correctly with the deep red color to the meat and it doesn’t look like there is any mold. I smelled the beef itself from the bag, all the deep red areas don’t smell, but I noticed the smell is coming from the fat part underneath. I didn’t rinse the ribeye that I got US Choice from Costco this time. Is this ribeye going bad? Or is that normal for the fatty area to have a funky kind of smell?
