21 Days in and has a weird smell was created by Westy
This is my first time dry aging with the UMAI bags. I started this project about 21 days ago with a 12.5 lb boneless ribeye from costco. I have monitored the temps and I think it has always been in between 35 - 38 degrees. The wife has said (for a few days now) that it is starting to smell? I know it's suppose to smell earthy and nutty (I think that's what I smell) but she says otherwise. I don't think it looks bad and the outer UMAI bag is still holding. I am wondering if I should keep it dry aging it or call it and see if it is bad. I was planning on dry aging it for at least 35 days.

Just kind of worried because she thinks it's already bad.

I would bet dollars to donuts that it is just fine! The first time aging is always the most difficult to assure SWMBO that the meat is not bad! To keep peace in the family you might want to go ahead and give in though 21 days is not going to give you much of a noticeable change.
