Hi, Has anyone had any experience with dry aging Wagyu beef. Very expensive piece of meat and would like to hear if it is worth the effort.

I've never aged it but I've had Wagyu plenty. My fear is you'd lose a lot of meat over something that is ridiculously tender as is.

Actually I agree with you as for the cost vs. the aging benefit. We have no idea how long that beef had already been dry aged on the butchered rack before cutting into
subprimals.
