Hello,
Is it ok to dry age in a daily use family fridge that opens and closes 50+ times a day, with other foods. I can choose between 2 and 4 degrees, which tempeture is the best? and is it possible?

There is no better environment for dry aging with UMAi Dry®!!! The whole benefit of UMAi Dry® is that you need nothing more than your home fridge and a sturdy wire rack to allow for air flow to all surfaces of the meat.

Dry age at temperature between 34-38F. Typical household refrigerators and restaurant coolers are designed to protect food items like fruits, vegetables, fish and meats from spoilage without freezing them. Please make sure that your refrigerator maintains temperature between 34-38 F to ensure proper aging and prevent spoilage. Ensure that the UMAi Dry® material is in contact with the beef and there are no air pockets inside the bag.

Hi Ron first of all thanks for all the great advice you give everyone.
Regarding the fridge I was planning to do my first aging in a fridge I have in an apartment which will be empty for a few months. Will it be ok if the fridge is very rarely opened?... Or does it need to be opened frequently?

We recommend a fridge that is in regular use. Only opening and closing ensures that the fridge is managing the draw away the CUPS of water that the meat releases while dry aging. No fans or salt will provide this function. Only a "regularly used modern kitchen frost free refrigerator in regular use."

Frankly, if someone wants to tuck the meat away and forget it, best they dry age “commando” rather than with UMAi Dry®. People are constantly trying to combine techniques—but UMAi Dry® is just the one simple process.
