I just started my first (12LB) strip loin four days ago. It was transferred from a cryobag directly into the Drybag using Umai's instructions. The vac seal seems to work and hold great. The issue now is the the top of the bag isn't making contact with the fat cap. Is that a big deal? Do I need to vac and reseal again? The meat is aging in an empty refrigerator (other than the meat itself).

I really appreciate the help and knowledge gained, so far, on this forum.

Hello, Hopper.
No need to reseal. Moisture is the trick, so it just wastes a bag to try and re-bag.
The fat cap doesn’t release moisture, so it often loses bond first. If you have good contact on the larger meat side on the bottom, go ahead and turn it over. Moisture will gravitate to the opposite side. You may it may not get a bond with the fat cap. No problem. UMAi Dry® is not a vacuum bag. Air pockets do not pose a risk.

Wow. Thanks for the quick response. Good point on the fat cap. The adhesion is still great on the sides and bottom of the meat. Thank you so much.
