I’m trying out my first aged beef experiment and noticed that the bag no longer shows the vacuum seal. In other words the bag is very loose around the meat. Also not seeing the darkening I was expecting. Been aging for 3 weeks...is this normal?

First of all, UMAi Dry will not hold a vacuum. It will only stick to the moist surface of the meet. This is why we suggest the “clean transfer method.”

Second, in three weeks, if you are dry aging in a modern frost free kitchen refrigerator located inside a room temperature environment, the meat should absolutely be looking mahogany brown by now. What are you aging in?

The refrigerator is in the garage and it is not heated. Suggestions?

A fridge in the garage is a little more than a cooler. If the outside environment is below 65°, the refrigerator does not cycle. It’s just a cold box. You need a modern frost free refrigerator operating in the kitchen or other room temperature environment. It should be regularly opened and closed. Only this will guarantee the refrigerator is cycling, moving the moisture out of the environment and away from the meat.

We try to be played it pretty explicit in the instructions and telling you what kind of fridge and where it should be located.

Sorry that didn’t help you.

You could try putting it indoors on and open wire rack in the kitchen fridge and see if the color change starts happening.

Otherwise, best to trust your nose. The smell of dry aging “funk” is quite different from rotting meat.
