Question on flipping my 16.5 Ribeye Whole was created by shavedhobbit
Hi Ron!

I have read many of your previous posts that mention once you put the meat in the fridge you never touch it again until it is done aging. I have read on my UMAi dry instructions to place the meat with fat cap up for the first week and then flip it after the first week. Should I follow the flipping instructions or go with your experience and don't touch it again until its done? I currently have my 16.5 Ribeye Choice from Costco fat cap up in the fridge for 6 days so far and was planning on flipping it this weekend. I would appreciate any advice you have. Thanks!

The "bag it and leave it alone" recommendation is strictly my own opinion - not that of UMAi Dry® Bag company. Yes the company policy is to flip it.
