I just bagged two money muscles min the UMAi bag after a week curing in the fridge. This is my second effort, the first came out great. Is it OK to wrap the excess bag around and under the meat while it's in the fridge, or should the end of the bag float free to enhance air flow? RAY

I trim the excess of my bags after I have sealed them. To me folding any excess under could hinder the moisture release.
