Rotating/Turning during Aging was created by LUV DEM TIGERS
I just sealed and started the process on 6-Half Boneless Ribeyes, fat cap up per instructions (for first week). Okay, I could have missed it, my wife says I miss a lot, but after a week to I turn over or rotate weekly or what? First time doing it and don't want to mess up.

By the way, the vacuum sealing went perfect on all six.

I’ve tried both ways; rotating it every week or leaving it alone on a rack. Both ways turned out good.

As long as your refrigerator is a frost free unit working at the prescribed temperature range there is no need to flip. Besides handling it excessively could lead to puncturing the bag. Personally I never flip even once...why chance it is my motto!

That is what I was thinking but I just wanted to make sure I was doing it right. 45 days from now I am having a Ribeye cookout.
