Ron....the next time you trim some dry aged meat might you take a few before and after pics of how much of the outer crust you remove. I have read you sharing about how you do it but some pics would really help us beginners I searched and didn't find any so forgive me if you have already done that. I think at first I trimmed to much and now I am wondering if I am trimming enough. I am sure that I am now over-thinking it !!! Thanks in advance...and thanks for sharing all your knowledge....Jim

I was just about to ask the same thing. I just started my second attempt at dry aging. Looking to have a better experience than my first attempt.
