To trim or not to trim?

Rib roast has been dry aging for 32 days and I'm going to take it out at 40... My question is if it's ok to not trim it and to just cut it up into steaks... Is it safe to eat the outside bark? Are the white spots safe to eat? Or should I trim it before cooking? If I trim it, will all the trimmings be wasted? This is my first time dry aging. Thanks

It is better if you remove undesirable portions from the food, I think you should go for a trim.
