Curing and drying in chamber with UMAi Dry bags for charcuterie

I am currently working on a coke cooler to be a dedicated chamber. I like the idea Of using UMAi Dry in the chamber and not in the refrigerator. My question is can I still use this product to cure and dry in the dedicated chamber that will have a temp humidity controller as well as a dehumidifier and humidifier? Does anyone do this or have tried?
