Hello everyone. I am new to dry aging. I started with a NY strip loin and a Filet tenderloin. The NY is doing amazing but the filet seal broke 7 days into it. I don't have a Umai back up bags, So I sealed it in a normal vacuum bag and ordered a Umai. My question is can I transfer it back to the Umai after 5 days in a Vacuum bag?

Yes you can - but just so you know the meat will not be able to release the moisture due to the FS bag blocking the escape. It will resume once transferred to the new UMAi Dry® bag.

So it will resume dry aging. But shouldn't comprise flavor?

Yes - it will continue - and in fact during that time in the FS outer bag it is "wet aging". The release of the moisture via the UMAi Dry® is concentrating the beef taste aka dry aging. You should be fine. BTW in total how long do you plan to age that piece?
