I am looking for some advice and suggestions. I have used UmaiDry before for some shorter 2-5 week dry-aging and I have been very happy with the results.

I will be out of the country for about 4 months starting late August and I am looking for a recipe that requires about 4 months of dry aging. Ideally it would be something that I could open up when I get back around Christmas. I was thinking about a Pancetta Arrotolata, but 4 months might be a bit too long.

I already have a dedicated fridge set up for a long dry-aging, I just need a recipe. Any advice is appreciated.
