1st time and lots of Blood Pockets was created by Lolligin
Hi All,

First time user and wish to know whether it is normal to have blood pockets (and not a small amount) inside the dry age bag? It is my first 5 days and I tried to avoid touching it (as seen on many post from others)...

The top fat of the Sirloin is nicely attached to the bag but the bottom is showing blood and worry that this will spoil the meat with all these excessive blood???

As long as your refrigerator is a modern frost free unit in proper working order than spoilage is unlikely; unless the meat was spoiled going into the bag. If the pockets are excessive then you might want to attempt getting the moisture down to one corner. Then make a small hole to let it drain out followed by a cover of that hole with a piece of good packaging tape.
