Meat hard as a roc was created by Primesal1
Looking for some feedback. First time using Umai bag. I’ve been aging a striploin for 40 days. Tomorrow is the big night. I looked at it this morning and it is hard as a rock. Is this normal??

Also, remember you have to trim off a thin layer of the hard part before cooking. How much is up to you..some people like the pellicle cause it gives more dry age taste...others don't.
