Can I remove bark and refrigerate meat because I'm not ready to smoke

My brisket is at 35 days and I want to pull it but I don't when I can smoke the meat. It could be a week or so. Can I stop the ageing process but not smoke the meat yet? Any help would be greatly appreciated!

Sure, but why are you stopping at 35 days? Brisket can be tough so it can benefit from longer aging. But if you want to stop, and refrigerate now and smoke later then that's fine!

Thanks for the quick response. I really don't know why other than that's what I've seen and it's my first shot at ageing meat. Heck, I'll leave it in for a week longer. Thanks!
