Hello! I am new to dry aging and I thought I would try it out with a Costco ribeye. 4 days in I realized there was too much air, so I cut the bag and resealed it, the next day my seal broke (probably because the bag was not clean when I sealed). So I decided I would take the bag off and rebag it. I got a nice seal on this one HOWEVER I forgot it needed to be moist when I put it in so now the bag is tight on the outside of the meat but it is not adheared...today is day 7 and I planned to take my first one to 14 days. Should I open it again, add some moisture and then reseal it? Please see attached photos.https://sinrobuckethead999.tumblr.com/image/189125292285

You have recognized the problem. There’s no need to re-bag generally as long as you have 75 to 80% service contact to start with. If you are going to re-bag, you need to prepare a sterile surface, run tapwater over the entire sub primal piece of beef, rest it on the surface for about five minutes to allow the surface proteins to rehydrate. Then re-bag.

What BagLady said of course!

But here's an a bit of advice...a ribeye is a large sub-primal and 14 days is "nothing" if you want to dry age that meat. A ribeye can and will easily benefit from at least 35 days and 45 is even better! Just my opinion, I suppose...

Yea I know I wanted to go to 35 days but after the mishaps so far I am going to take this one to 14 and the next one will go to 35 day. Thanks for the advice. Should I open this bag then and then reseal?
