I wasn’t aware that a garage fridge was not a good idea. I had the ribeye in the umai bag in the garage fridge for 9 days.

I have now moved it to the kitchen but should it be ok? Garage ambient temp was between 45-70F and fridge was set to 36F

9 days in and meat is slightly firmer and a darker color. No mold or bad smell.

Thanks Ron! I have very good bag contact with the meat. The color seems to be looking good based on pictures I have seen so I am hoping with the ambient swings the fridge was cycling enough. This is my first attempt so am a little cautious!

Another question: The fat cap on my ribeye does not seem to be changing color like the rest of the meat. Is this normal or what should the fat cap look like after 10 days?

The fat cap will remain "whiteish" the whole time unlike the protein side.
