Hello! it's my first time aging, It's been 23 days (from November 21st) and I still have moisture in the bag!

The side of the fat hardens (but not all, there are soft points) but still slightly moist, The bottom is still soft and moist and the sides are still soft and moist as well.

The temperature in the fridge is 38F, I'm trying to figure out if it looks good so far?

No mold in the bag so far!

hmmmm...tell me about what kind of refrigerator you are using. I don't mean brand, but what type. By the amount of moisture present after 23 days I have a sneaking hunch that your refrigerator is not drawing off the moisture being released during the dry aging. If Im correct your meat may be starting to go bad.

Thank you for your response Ron! It's four doors NO FROST class T refrigerator. You're right, I just checked the specification of the refrigerator and it says "Triple cooling system to maintain high humidity" :(
Although from what I feel there is no high humidity inside the fridge.
