7 Kg ribeye. Worried about vacuum&contact...

Hello again,

After my experience with Umai charcuterie bag, i decieded to start my main goal with 7 kg ribeye unfotunateley with 700x400 mm bag.

Since i had to use a bigger bag, I put lots of effort to have a good vacuum and seal on Umai bag with a vacuum sealer. I have already messed up a bag and 4 vac mouses :(

I put on a wire rack with fat side up and fold the excessive bag under the meat side (i dont know if it has positive or negative effect?) This is the first day of process but I still have worries about the final vacuum and contact. Do you think that it is ok? Should i do anything or leave the meat alone? Comments will be appreciated.

While it is loose and will become even more so as the meat dry and shrinks I think you are OK. I always wish people would not believe they have to have a perfect vacuum when using a UMAi Dry® bag. Likewise a vacuum sealer is not needed! I've posted my no-sealer method many times and I always cringe when people start out using 2 or more bags when that is not necessary!

Thank you Ron. Eventhough i have been reading lots of your comments stating no perfect vacuum needed, i could not help it. Consider it personal stubbornness :)

One last questin regarding the foldin issue, i know that you say leave the meat alone but do you think that folding it decrease humidty-oxygen exchange on that area? Should i unfold it?
