Not sure if my prime rib is aging properly was created by Bcgardiner@msn.com
I have been aging an 18 lbs prime rib since 12/20/2019. It is now 1/11/2020 however it does not appear to be hardening on the outside. Still relatively soft to the touch. Still somewhat red in color. But have noticed that it is turning slightly darker the last few days. I’m concerned I may have done something wrong. This was in a fridge in the garage. Now I’ve moved it into the house after reading that garage fridges are not a good idea.
Is there still a chance it might work? Or should I start over?

Well, Sir, have you done the smell test? Remember though dry aged meat will smell earthy or nutty - but "not drive you up the wall rotten!" What you describe could be a problem since that garage refrigerator was not wicking off the moisture as that meat aged. That explains the softness and color situation. At this point if there is no rotted smell you probably will be OK

There is zero smell coming out of the dry age bag. I think that’s a good thing, correct?
