21 day already bag not sticking anymore was created by Toothmech
First time dry aging. I have 12 lb bone in ribeye in fridge in garage with thermometer. It has been 21 days and there is a smell but not rancid. I did notice bag looser and as tight as before. Wondering if it is okay based on others’ experience. How do attach pocs in forum or do I have to use google or the likes?

The operative words explaining your problem are "in fridge in garage"! UMAi Dry® bags are designed to be used in a modern, frost free refrigerator in regular use located within a consistent room temperature environment. Old refrigerators located in a garage are subject to high heat in the Summer and too cold in the Winter! Typically those refrigerators are not frost free and therefore the moisture being released from meat as it dry ages does not get removed and the air and meat CAN become rancid. Dry aged meat takes on a earthy, nutty smell - not rancid. You may still be able to salvage the meat buy getting it out of the garage and into your kitchen refrigerator! Good Luck!
