Can I put meat in new Umai bag within 2 days?

So this is my second time dry aging with these bags. For some reason this go round I didn’t get nearly a good vacuum seal. I know as long as meat is 70-80% you should be fine but I feel like it’s still not there (where I want it and how it looked last time). I ended up using 2 bags on my first try last time. So this time I was down to the one bag and ended up cutting some bag off and trying again but still in the end feel it’s not adequate. So if I bagged it Sunday night and have new bags coming Tuesday, is there any reason I can’t re-bag come Tuesday?

The wetter the meat is with natural hemoglobin the better the chance for bonding. Unless there is some serious ballooning that has you so worried then I personally would not waste a new bag!

Thanks, Ron! I guess I was worried about the meat being too packed in there too since I cut off part of the bag to get 2 seals. But, from experience it will shrink a little anyways.
