Hi all!

I am on my third dry age and continuing to experiment. Recently I did my first boneless ribeye. It came from the butcher in wax paper (not a vac-seal bag). For this one, I thoroughly washed my hands, ran water over the meat, and then did my normal UMai vac-seal. I was able to get great contact between the surface and the bag because there was no bone and the shape worked out.

Beneath this meat, I had steak that was 31 days aged (bone-in ribeye). With this one I rolled back the bag at 35 days, and cut off some for cooking. Then I resealed the bag for additional aging.

On the 10th day of the new boneless ribeye, and 41st day of the bone-in ribeye that has been opened and re-closed, my apartment has started to have a funky smell. I have taken the meat out and tried to smell which it is coming from, and I can't seem to tell. My instinct says it is coming from the new meat. I am hoping by including the photos below you all will help me figure this out. Or if I just shouldn't worry at all.

Photo 1 - Brand new meat on the top, 31 day old meat below. No smell at this time.
Next 4 photos - Boneless ribeye is 11 days old and looks odd to me. Photos from all different angles. Why is this patch so white? Is that a large amount of mold?
