Should there be any smell associated with the meat? There is a slight nutty smell. Meat has been aging for 22 days and is beginning to turn dark red.

This is my first time and am a little concerned about slight aroma.

Relax! Dry aged meat takes on a smell most often time described as nutty, earthy or to some people an aged cheese smell. Sounds to me like your meat is aging perfectly!
