Hey all, this is my first time using the Umai bags and dry aging. I'm trying to dry age a 16lb prime ribeye using the artisan meat bag.

It's a tight fit.

I managed to get most of the air out of the bag, with good contact all around, especially on the fat cap, but not so much in the bone valleys. I sealed the bag about 5 times.

The only potential problem I might have is that the VacMouse fabric is touching the meat. I tried searching around, and looked at some pictures showing the VacMouse fabric on the meat side of seals, but I'm wondering if the fabric actually touching the meat will introduce pathogens that will spoil this expensive cut of meat.

Is it OK or should I cut the meat out and try again?
