First Time Dry Aging Question was created by DH30
Hello everyone. I’m in the middle of my first dry age excitement, and I’m just over 30 days in. I was never aware that you should keep it in your normal fridge instead of the fridge outside where there’s not as much circulation. The color hasn’t gotten as dark as I thought it would be. I’m wondering if I’m still ok or is this not going to turn out the way it should?

Sorry that you didn't read that requirement. There is a very good chance that your meat has started to rot. At this point the best you might be able to do is to smell the meat up close and if it is at all rancid smelling there isn't much you can do now.
