White mold on outside

White mold on outside was created by RubberDucky
I've used Umai dry 3 times now in the past. On those previous batches I did not notice any mold. However on my current run-through I have found a patch of mold.

If the mold is just on the outside bark will it be fine since I will trim that pellicle off anyway?
Is this normal?

Unless your meat was already trash then any mold is on the surface and it will be trimmed off anyway. If your meat wasn’t purchased in sterile cryovac bags then there is good chance it has been already contaminated.

The meat was in a sealed plastic bag of sorts at the butcher. The butcher opened the bag and cut off this 6lb piece for me. I don't know if it was a sterile cryovac bag.

I'm sure hoping the entire piece isn't ruined. As I said in my previous post I've never dry aged a ribeye cut if half before.

Perhaps that is why I am getting mold..
