Minimum size strip loin to dry age was created by Focusin
I've purchased the sampler pack which comes with 3 10X20 inch bags and am wondering what would be a minimum size strip/rib to dry age.

Would the smaller bags be useful for a prime rib for example?

We do not recommend trying to dry age single steaks, much let alone even just a few. It is best to dry age whole sub-primals which may weigh anywhere from 12 to 20 pounds.
