After looking around I could not find any information to answer my question so here it is:

Is there a different refrigerator setup when using the Umai Dry -vs- the traditional type of dry aging as far as temperature, humidity and air circulation?

UMAi Dry® bags are designed to be used in a modern, frost free refrigerator in regular use located within a consistent room temperature environment. Un-needed fans and salt trays can interfere with the humidity management of the properly working compressor.

What is the idea Temperature, since a modern refrigerator has a few different "zones" for temperature?

WHAT ARE THE TEMPERATURE REQUIREMENTS FOR DRY AGING WITH UMAI DRY® TECHNOLOGY?

Dry age at temperature between 34-38F. Typical household refrigerators and restaurant coolers are designed to protect food items like fruits, vegetables, fish and meats from spoilage without freezing them. Please make sure that your refrigerator maintains temperature between 34-38 F to ensure proper aging and prevent spoilage. Ensure that the UMAi Dry® material is in contact with the beef and there are no air pockets inside the bag.
