What went wrong was created by Possemato
First time user. Bought a 14 pound strip loin choice. Followed directions to a t. Good seal great contact, aged 35 days with proper air flow. Trimmed and cut 2 1” steaks cooked to rare everything looked great. Steaks were very tough with poor flavor. Even if I got stuck with a poor cut still should of been somewhat tender. Will try a rib from another vender before I give up but so far not impressed.

Good idea of trying a different vendor. I quit buying meat from Kroger for instance because their meat was always tasteless and tough. I found good sale prices was a tip off that that poor heifer may have died from old age or quit producing milk at the dairy! Dry aging improves tenderness, but if it began tough it stays tough!
