Hi Sirs:

I did my first dry aging attempt using umai last Saturday. Its been 4 days and I am monitoring it and I noticed some whitish thingie in some areas of the meat. I check in the forum here and some says its like white molds. Is it bad or what is the next step to do here?

White mold in just 4 days time? Where did you buy the meat? Was it from a display case and not still sealed n a cryovac bag? Also where are you aging the meat?...I mean what kind of refrigerator?
