I sealed the strip loin according to directions. The first week I had the fat cap up and the seal looked great! Yesterday I flipped the meat per instructions. This morning it looks like there is no longer a good seal. Does this still have a chance or should I cut the bag and put in another bag? I would appreciate any feedback! Thank you!

You'll be fine based on that picture! In fact trying to re-bag it would just be wrong!
As we said in the Q & A.... You will have good, consistent dry aging results with only 70 to 80% of the meat surface bonded.

Ron, thanks for your reply! That's reassuring!
We have a newer vacuum sealer and it's good for some things but I think my older one is better for sealing something like this. Food saver v2244 (old) vs food saver v3000 series (new)

I agree the older "dumber" ones are the best for sealing the UMAi Dry® bags. My favorite is my old model 1050.

To future readers...If a seller at a garage sale (tag sale whatever you call them where you live) is honest I bet there are a ton of old models in perfect working order to be had for a few bucks at best!
