Hi guys just starting with dry aging and I tried to get the best quality Ribeye from my butcher. Well I got this piece with great marbling but is too much fat is possible? Please look at the picture, it is more than 50% fat...

Too late to take it back now I suppose, but that is NOT a good piece of meat! Unless he really marked the price WAY down then you got royally ripped!
Sorry, but I wouldn't even bother wasting a UMAi bag trying to age that piece.
