Is it OK to begin the process on Meat that has been in the ref for 2 days?

Hi,

I was going to start my ageing today, then watching the videos, I didn't realize I had to transfer the meat from bag to Umai bag without touching.

I had to cut my 7 rib roast first, so I've taken it out of the grocery bag and I've cut it. The 3 rib I am going to age has been sitting thawing covered in the fridge with saran wrap.

Can I go ahead with the ageing process and transfer it to the Umai bag?

Yes - you can, but please please realize the UMAi Dry® bag may not adhere very well right from the start since the surface of that meat has already dried somewhat - PLUS with your handling it may have already received some bacteria which may grow during the drying process. One last thing...when you say "grocery bag" does that mean you bought the meat out of a butcher's display case? We really recommend only buying meat for aging that is sealed in cryovac bags.

I will try it. I meant the cryovac. Thanks.

Is there anyway to fix or lessen the probability of bacteria once the meat has been handled?

I have a similar situation and am going to dissolve some Instacure #1 in water and spritz it over the roast,rinse off and pat dry.
I believe this will work.

Thank you. That sounds good. I will try that next time. I went ahead and did it anyway without any sterilization. Let's see what happens.
