I'm a little confused. All of the recipe videos I've watched on your site, and on the card that comes with my orders for various salumi spice packs, call for 2.2 lbs of meat and yet all the spice packs call for 5lbs of meat. Why?

Also, it would be nice to have a single source to reference to ascertain all the necessary ingredients for the various salumi's at 5lb batch size. This pertains to meat portions as well as Kosher salt and Instacure #2. Everywhere I look on your videos and website there seems to be a need to interpolate. If you want to help make this easy, publishing complete recipes for five pound batches would be most helpful.
