Can I use thawed sirloin for dry aging? was created by vince_tung
Just got my UMAi Dry bags, and i can't wait to dry age my own steak. I want to use my frozen sirloin which I bought previously, can i do that? And what's the best way to thaw it before putting it into the umai bag? Thanks!

Welcome aboard! Yes you can BUT- my concern is like we have posted here numerous times which deals with where you purchased the meat, meaning was it sealed in a cryovac bag when you bought it and then froze it or was it just purchased unwrapped out of a butcher's display case? Then there are also questions and concerns raised about how it has been handled.

Honestly - if any or most of the answers to my questions above lean toward problematic then if I were you I would wait and start with a newly purchased sub-primal still sealed in a cryovac bag.

yes, the sirloin came frozen and sealed in a cryovac bag when i bought it.

so should i just put it inside the refrigerator for 24 hours? how can i make sure the sirloin is completely thawed?

Good! I believe you'll need more like 36 to 48 hours to thaw completely since there is so much mass to that sub-primal.
