I understand from reading other posts that there is no NEED to wrap your charcuterie in collagen sheets when using Umai Dry. My question, however, is CAN you use them with Umai Dry and get a safe result?

I would like to use the sheets on my charcuterie because I want to tie them and stuff them into netting so they keep that nice round shape. The collagen sheets keep the kitchen twine and netting from ripping the dried final product when it’s weight has been reduced to that sweet spot of 35-40%.

So, CAN the sheets be safely used in this manner with Umai Dry bags?

Just working backward through pending communication, and came upon this earlier inquiry after responded to your subsequent one. We hope that the previous answer provides you with the needed information.
UMAi Dry® is designed to be used on it's own, without the additional layer of collagen, cellulose or natural casing. It certainly is not necessary with fibrous casing.
